Pumpkin Pie

Happy Thanksgiving!

We’ve been making some killer pumpkin pie around here and we wanted to share it with you!

Want to add a surprising twist?  Add chocolate chips and top with a sprinkle of turbinado sugar before baking.  YUM!  I hope your holiday is filled with laughter, joy, and the people you love.



Pie Crust Recipe

Makes 2 pies or top and bottom of one pie


2 ½ cups Flour

1 tsp Salt

6 TBS Unsalted Butter (chilled)

¾ cup Shortening (chilled)

½ cup Ice Water

Crust Making:

Add Flour and Salt into a large bowl.

Add chilled butter and shortening and use a pastry blender or fork to cut them into the flour until you have course crumbles.

Add a tablespoon of ice cold water at a time until dough begins to clump.  You might not use all of the water.

Mold into a ball and cut in half.

Ideally – Press each piece into a disc and refrigerate for 2 hours or freeze for 30 minutes.

Lay out parchment paper and flour both sides of your disc and add more parchment. Roll out until flat and even.

Transfer to pie tin and trim edges.

Blind Bake for 8 minutes with edges foiled for Custard pies like pumpkin.  Fill with weights or dock.


Pumpkin Pie Filling Recipe

Makes 2 filled Pie Crusts


1 Pie pumpkin (about 3 lbs)

Spray Canola Oil

14oz Sweetened Condensed Milk

½ cup Heavy Whipping Cream

¼ Cup Brown Sugar

2 TBS Cornstarch

2 TBS Molasses

2 TBS Canola Oil

1 TBS Cinnamon

½ Tsp Ginger

½ Tsp Nutmeg

3 Large Eggs


Baking the Pumpkin:

Preheat oven to 375F

Cut Pumpkin in half and remove stem and core.

Place face down on a baking sheet

Spray Canola Oil on outside skin.

Bake for 1 hour.

Remove pumpkin from skin and place in bowl.


Pie Filling:

Reduce oven temp to 350

Mix fresh pumpkin until smooth

Add all ingredients and mix until well combined.

Pour filling into crusts and bake until center is set (about 1 hour).

Place on wire rack to cool for 30 Minutes.


BONUS!  Whipped Cream

Makes 2 Cups

Combine 1 Cup of heavy whipping cream with 1 tsp Vanilla and 4 TBS of Powdered sugar.  Beat in mixer (or by hand if you need an arm workout) vigorously until soft or stiff peaks form.  Watch for the consistency that you enjoy.
